No mayo potato salad

Ingredients for 3 servings


Potatoes (peeled,diced ) 400g

1 cup of vegetables of your choice (fresh carrot/ frozen peas)

1tsp salt ( for boiling water)

700ml cold water


2Tbsp (or more) soy yoghurt

1tsp dijon mustard

1tsp lemon oil

Black pepper


1/2 cup of freshly chopped vegetables( red onion/bell pepper)

1tbsp chopped olives

1tbsp chopped pickles (capper)

2tbsp frozen herb



Make sure your plant based yoghurt has no vanilla flavor.


Step 1

Add all the diced potatoes ,carrot and frozen peas in a big pot.

Add 700ml cold water so that everything are going to be boiled evenly ,

add 1tsp salt.

Boil the ingredients for 11-12mins.




Step 2

In a big bowl mix the rest of the ingredients.



Step3

Add all the condiments.

The mixture of soy yogurt mustard, pickles and pepper is already very close to the mayo taste but I like to add just a drop of olive oil or this oil.

( This lemon rapeseed oil smells great but it's an optional )


Step 4

Strain water from the boiled potatoes, carrots and peas.

However, do not rinse them with water.



Step 5

Mix everything with a wooden spoon.

You can even mush partly.



Step 5

Add frozen herbs of your choice.

These are just 2tbsp parsley.

The frozen herbs will reduce the temperature of the potatoes quickly.



Finally, season to taste with black pepper and some salt.

At this point the potatoes are not so warm anymore.

Keep the salad in the fridge for 30mins before serving.
