Non-fried Potato Croquettes WS memories Feb 2025

Ingredients for 6 non-fried croquettes(each portion is about 70g )
(For the mashed potato)
300g peeled and diced potatoes (choose floury potatoes=Mehligkochend)
500ml water
7g salt
(to add later)
100ml plant based milk (soy/almond/oat milk etc)
(For a mixing bowl)
½ cup chopped green onion /corn (or any chopped vegetables)
2tbsp meaty soy topping (optional)
Pepper to taste
(For the crumbs )
30g EV olive oil
1 cup panko (see below)
Step 1
(Adding salt is important here to cook potato fast)
Add all the potatoes and salt(7g) into the water (500ml)
Boil potatoes until fork tender.
It takes about 15 minutes.

Step2
While boiling potatoes ,slowly toast 1cup of panko(breadcrumbs) with 30ml olive oil over a low to medium high heat.
The panko will be nicely golden brown in about 10 minutes.
(I used this ming chu panko and I bought it at an Edeka)
For this recipe German standard "paniermehl" is too fine in my opinion.


Step 4
As soon as they get fork tender, strain potatoes and place it in a saucepan.
Add plant based milk over hot mash potatoes.
Crush them vertically with a fork or spatula.
(But don't knead or over mix them)
It is okay if it seems so creamy at this point but don't make them waxy by mixing too much.
(It will naturally firm up over time)

Step5
Prepare 1/2 cup vegetable of your choice /frozen mixed vegetables/canned sweet corn etc.
Optionally add about 2tbsp seasoned minced soy.
But if you don't have any pre-cooked soy ,add some spices of your choice.

Step 6
Combine vegetables with mashed potato.


Step 7
Divide the mixture into 6 equal portions.
Wrap each portion with a plastic wrap.
Rest the patties in the fridge for 5 minutes.
Cooling makes it easier to stabilize the shape.

Step 8

Finish by dusting with breadcrumbs before serving :)
OMG they taste just like deep fried food...
Serve it with some sauce of your choice and a lot of salad 💚
