One Pan Biryani

I simplified one of my Biriyani recipe to share at an event of April 2025.

This one is made with minimal tools and ingredients.


Biryani is not the easiest dish in general.

👉Soak rice for 30 minutes!

👉Use frozen onion

👉Prepare ingredients in separate containers to ease the process.


Ingredients for 3 main dish portions or 6 sides


(Ingredients A)

10g rapeseed oil with lemon flavor

10g oil (neutral)

1tsp whole cumin seeds

1/2 tsp coriander seed

5g minced garlic

5g minced ginger

1/2cup chopped onion (frozen)

1tbsp tomato paste


(Ingredients B)

1cup sliced raw potato

1cup other veg(green beans, paprika etc )


(Ingredients C)

3cm cassia cinnamon bark

3 cloves

1 bay leaf

1 tsp cumin powder

1 (dry) chili chopped

1 star anise

7g salt

70g plant-based yogurt(coconut)


(Ingredients D)

250g white basmati rice( rinsed and soaked for 30 mins)

600g water


(Ingredients E)

100g fried tofu or cooked beans of your choice

1/2 tsp turmeric

1/2tsp garam masala or Rajma masala(MDH)

1/2 cup fresh coriander(parsley or mint )

3tbsp fried onion (store bought)


(Topping)

Fresh herbs of your choice/lime juice etc


Step 1

Roast all ingredients from A group until fragrant.

I especially like to use frozen onion so the spices don't get burned quickly.


Step 2

Add ingredients of B group in the same pan and stir-fry vegetables for 3minutes.

(prepare ingredients C spices in a bowl )



Step 3

Add Ingredients C, salt and plant-based yogurt.

Stir it well.





Step 4

Add rinsed rice.

Make the rice layer flat.




Step5

Pour in 600ml water.

Stir it once and bring to a boil. (don't keep mixing)

Once it boils, turn down the heat

Keep cooking rice over a medium-high heat for 15 minutes.



Step6


When there is no more visible water on the surface, add fried tofu, fried onion.

Sprinkle 1/2 tsp of turmeric and 1/2 tsp of masala on top of rice.

(Don't mix the added spices yet)

Cover the pot with a lid.

And keep steaming rice over a low to medium heat for 10 more minutes.



Step7

Prepare 1/2 cup of chopped coriander, parsley or mint as topping.

(Slice lime if you would like)




Step 8

Mix biryani to serve :)
