Potato green beans


I successfully copied the food I tasted at a local Italian cafe.

I believe that is a spring side dish that is very mild and tasty.

It can be made with such a simple ingredients and also suitable for a

meal prepping.


Ingredients for 6 side dish portions


30g olive oil

100g white onion(sliced)

300g potato (sliced)

1chopped dried chili

400g green beans

10g salt

350g tomato puree

50g water




Roast onion with olive oil until golden.





Then add potato slices and chili into it.

Keep roasting for 3 minutes or so then add trimmed green beans.




Stir it once then add the rest of the ingredients.



Place a lid.

Cook the vegetables over a medium high heat for about 25 minutes or until potatoes are tender.

It looks as if there is not enough water, but this is all right because the water will come out of the ingredients.



When the potatoes are tender, they are ready:)
