600g veggies in total
This is about 3 servings as main dish
6 servings as a side dish.
(I made this recipe for a brunch event as the side dish)
100g red onion
100g carrot
100g red bell pepper
100g yellow bell pepper
100g egg plant
100g zucchini
100g tempeh
1/4 cup peanuts
4-5 cloves of garlic
3 bay leaf
1tbsp brewer’s yeast
1-2tbsp olive oil (heat stable oil)
1tbsp Italian herb mixed spice (oregano/thyme/rosemary)
1/2 tsp salt
Black pepper
Toppings
1/4 cup fresh herbs( Basil leafs)
Some EV olive oil
STEP 1
Pre heat oven to 220℃ while chopping ingredients.
STEP 2
Chop ingredients into 1tbsp size.
STEP3
Place a parchment paper on a baking tray .Place all the cut vegetables and tempeh slices on it.If fresh herbs such as bay leaves or rosemary are to be added, place them under the vegetables.(don’t add mushroom if you want to cook veggies in 25mins it is going to be soggy )
STEP4
Grill in the oven in total of 25mins (200℃)
(After the first 15mins take the tray out and flip veggies once , place it back.)
Just before you serve this grilled veggies, drizzle some EV olive oil.
Fresh herbs such as basil and parsley can be topped.
(Don’t bake fresh basil and parsley leafs they brown too quickly)
