Pickled onion (and pickled onion juice dressing)

One super easy pickles recipe for anyone who has a lot of onions to consume.

To make this pickled onions, you'll need 5 basic ingredients!


1 red onion (thinly sliced)

5 thinly sliced ginger

1/2 cup water

1/2 cup rice vinegar

1tbsp raw cane sugar

1tsp salt


Portion size is one jar ( 350ml)



Method

STEP 1

Slice onions and ginger



STEP 2

Warm 1/2 cup of water and ginger slices in a sauce pan.Add some sugar and salt.

Turn off the teat as soon as sugar and salt dissolve.


STEP 3

STSAdd the brine in a clean jar.



STEP4

Add onion slices. Pour rice vinegar in it.

Make sure the lid is closed tight and shake it.



STEP 5

Leave the jar at room temperature for 1 hour and refrigerate it.

Serve the onions as an garnish or on a salad.

The pickles look nicely pink the next day.

This pickling liquid can be recycled to make a delicious dressing.



Dressing idea

40ml pickled onion juice

20ml soy sauce

2tbsp peanut butter

1tbsp ground sesame or sesame seeds




This dressings is served with the pickled onion at one of my workshop.
