Salad with some grilled vegetables

Grilling vegetables in the oven is not overwhelming.
But different vegetables require different lengths of baking time and different baking methods.
Here's how I made this salad.
Salad For 2 plates
For grilling
1 egg plant (grilled for 30mins in total at 225°C with olive oil)
Half a red bell pepper (225°C grilled for 20-25mins oil free )
Half a red onion (225°C grilled for 20-25mins oil free )
1 carrot (225°C grilled for 20-25mins with olive oil )
I didn't preheat the oven and started with the most time-consuming ones.
It’s a good idea to chop up some raw vegetables while some vegetable are getting grilled in the oven.
Only the egg plant slices are turned over once during the process.

Examples of salad ingredients
Half a red bell pepper
1 kiwi
Half a red onion
1 cup cucumber
1 cup romaine lettuce
1 cup Chinese cabbage
Lime juice, some coriander
A pinch of salt & pepper
Walnut bread

Lastly, squeeze in some lime juice and sprinkle with pepper.
Drizzle with extra virgin olive oil if desired.
