Simple Baba Ganoush
Ingredients for 2servings
1 Eggplant
2 cloves of garlic
1/2 tsp salt
1tbsp lemon juice
1tbsp tahini (runny sesame paste)
1tbsp EV olive oil
1tbsp chopped herbs of your choice
A pinch of smoked paprika, black pepper
This smokey dip is a Mediterranean eggplant dish made from roasted or grilled eggplant, sesame paste , olive oil, lemon juice, garlic, salt and some
fresh herbs toppings.
If you cook at home It’s such a simple sheet pan dish ,that is suitable for busy weekday night.
I usually bake the eggplant with a lot of garlic and bell peppers because
there is a lot more space on the tray.
You can use these grilled bell peppers and garlic for your other dish as well.
I like to marinate the peppers and serve them with Baba Ganoush.
STEP 1
Pre-heat oven at 250℃

Scored eggplant like the next image👇 and drizzled some olive oil.
Grill sliced eggplant and some garlic.
( And some other veggies if you would like )
at 200℃ for 20-25mins,then remove grilled bell peppers and garlic.
The eggplant takes usually longer.
Keep grilling eggplant in total of 30-35mins and it should smell good and look like this. (the dark skin is crust and the yellow part is melty )

I’m just showing how they look from this side but they
need to be placed scored side down in the oven.

STEP3
Scoop all the creamy part. Remove the dark skin.
And blend the creamy part with hand mixer or chop it well with a knife .
Make some mushy paste.

STEP4
Transfer eggplant paste to a bowl and mix it with sesame paste, lemon juice and salt.
Sprinkle some fresh herbs and smoked paprika powder ,pepper.
Drizzle some EV olive oil.
