Steam-Fried Buns

This recipe is one of up cycled recipe of my regular steam buns recipe.

Have fun making lots of different dishes with the same dough.


You can make 4 regular pieces to 6 small pieces of buns with this ingredients

The size of the dough in the step 9 ,as well as the cooking time is equivalent.

Ingredients for the dough


125 g wheat flour (405)

25 g cornstarch

1 tsp baking powder

1 tsp dry yeast

1 tsp sugar (for the yeast)

80ml lukewarm water (about 30℃)


+½ tsp of sesame oil for the coating

+100ml water for steaming

+some flour for dusting


Ingredients for the filling

100g tempeh(or tofu)

1 cup of vegetable of your choice (Spinach/shredded carrot)

1/2 cup of aromatic vegetables (coriander/green onions/ginger)

1tbsp vegan oyster sauce (or sweet soy sauce)

1tbsp light soy sauce

1tbsp water

1tsp sugar (optional)


+5ml olive oil for frying tempeh

+10ml olive oil for frying buns.

+just a drizzle oil for adding sesame aroma (optional)



STEP1

Combine all the dried ingredients in a big bowl.


STEP2

Add lukewarm water and stir the dough with a stick until the whole mixture is moist. Don't touch the dough with your hands yet at least for 2-3 minutes.

STEP3

Wed your hands with water and knead the dough for100 times.

Yes just 100 times (please count it, as overkneading is not good.)

Then add the sesame oil,

Knead 20 more times, then divide into 4 to 6 pieces.

Cover it and set aside for 15 minutes while making the filling in the next steps.

STEP 5

Use a cheese grater to grate a tempeh.

If you are adding seasoned tempeh, remove soy sauce from the ingredients.

This tempeh is natural. (not salty)

STEP 6

Warm a drizzle of olive oil on a frying pan.

Saute shredded tempeh until it becomes slightly nutty.

STEP 7

Add fresh ingredients.

Give it a quick stir for a minute or two and turn off the heat.

STEP 8

Add all the rest of the ingredients. Mix well.

Wait until the sugar has dissolved and the filling is ready.

Set aside while we roll out the dough in the next steps.

STEP 9

Back to the dough.

Lightly flour a mat and the dough balls.

Spread the dough flat on it.

The diameter should be the length of a teaspoon.

STEP 10

Add the filling on the dough.

If you are making 6 pieces.

It's easier to separate the filling into 6 portions first.

STEP 11

Wrap the filling in the dough and close.

If you can't wrap it up neatly, that's okay, because you'll turn it over and press it on both sides anyway.



STEP 12

Drizzle some olive oil on a frying pan.

Turn upside down, hold the buns flat and roast the surface for 2 minutes

over medium heat.

STEP 13

Then turn over and roast for just 1 minute.

STEP 14 (Be careful here)

Pour in 100ml water in this heated pan.

Cover with a lid once water has been added.

If you don't have a lid for the frying pan, use a big plate or a silicon mat.

Let it cook for 6 minutes or so.

(Steam until there is no more water in the bottom of the pan.)

STEP 15

Lastly add just a drizzle of sesame oil on the frying pan. (Optional)

Shake the buns from side to side to dry the surface and flavour with sesame oil.

At the end both side must be crispy .
