This is the gyoza recipe I made for the cooking event.
It is not a traditional way of making dumplings.
The recipe is made with details that fit within the time restrictions.
However, they are very easy and tasty dumplings.

Ingredients for 30 pieces or more
30 Gyoza wrappers.
A small bowl of starchy water( 1tsp cornstarch with 1tbsp cold water)
about 1tbsp oil for frying each15 pieces
80ml cold water for steaming gyoza
A drizzle of roasted sesame oil (Optional)
For the filling
200g smoked tofu
1/3 cup hot water
1/3 cup instant oats
1/3 cup shredded carrot
1/3 cup finely chopped bamboo shoots (jarred)
1/3 cup Sauerkraut
1/3 cup chopped green onions
1tbsp finely choppedginger
1tbsp finely choppedgarlic
1tbsp chia seeds(optional)
1tbsp vegan mushroom sauce
1tbsp light soy sauce
1tbsp roasted sesame oil
A pinch of white pepper
STEP1
Boil water in an electronic kettle while preparing condiments.
Except for the pepper everything is 1tbsp.

STEP2
Prepare the filling.
Shred carrots with using cheese grader or slice very finely with a knife.
Crumble smoked tofu into very small peaces with hand.
Chop spring onions, ginger, garlic and bamboo shoots etc.
👉Bamboo shoots are a popular ingredient in many types of Asian cuisine and
this jarred boiled Bamboo shoots are easily accessible.


STEP3
Move the vegetables to one side of the bowl with using a spoon to create some room for to add oatmeal.
Pour boiled water over the instant oats.
Let it absorb water for a few minutes.
Add all the seasonings and mix well with a spoon.

STEP4
Lay out the dumpling wrappers on a baking paper or a silicon mat.
If you use the wood cutting board ,make sure the surface is dried.
Sometimes the wrapper comes out bend from the package but it's not a problem.

This time I use these wrappers called " Happy belly".
And I really like it's "not fragile thin texture".
You can buy them in the Go-Asia supermarkt.
This one package contains usually 30-36 wrappers.

STEP 5
By now the instant oats and chia seeds are softened.
Add seasoning to the filling mixture.
(Soy sauce/roasted sesame oil/vegan oyster or mushroom sauce)
And mix well with a spoon.


Prepare starchy water just by adding 1tbsp water in a bowl with 1tsp of corn starch. It works as a glue in the next steps.

STEP 5
Place about 1tsp of the filling on top of each wrappers.
(Not a table spoon! It’s too much )
Wet half top of the wrapper with the starchy water to make it easier to seal.

STEP 6
Seal the dumplings.
(There are so many other ways to seal them but this is what we tried )




If you see any openings here ,apply some starchy water to seal it well.

STEP 6
Heat about 15 ml of oil in a small frying pan (for 12-15 pieces gyoza)
Fry until one side turns nice golden color.
If there is no space in between gyoza you can place some more in the center.


STEP 7
Be careful not to burn yourself.
The steam is really hot in this step.

(you can wipe out excess oil if you are afraid of adding water in the next step.)
When you see one side of the gyoza turned golden pour in 85ml or 1/3 cup of cold water over the dumplings.
Place a lid or a silicon mat to cover the entire thing.

Close it well and let it steam over a high heat for 5 - 6 minutes.
You will hear a crackling sound when the water in the pan evaporates.
Carefully remove the lid .

STEP 7
When there is no more water on the pan drizzle just a bit of
roasted sesame oil in the center and shake the pan from side to side.

STEP 8
Time to flip this whole thing.
Make sure the pan is dried on the surface.
Place a dish that fits in the pan.
Turn over rhythmically.

Done.
Serve it with a dipping sauce of your choice.
(This is made with red wine vinegar,light soy sauce and a drop of chili sesame oil)

At the event I also offered this peanut dipping sauce.

To make this peanut sauce you just need to mix these ingredients in a bowl.
1tsp home made chili sesame oil
1tsp sugar
1tbsp light soy sauce
1tbsp peanut sauce
2tbsp coconut milk

These fruits cocktail was made with some fresh pineapple, strawberries and canned mango.
