Vegan breakfast omelette

I call this dish the "Breakfast omelette" because I really like to eat my
veggies in this way to start a day.
It's filled with a lot of starchy vegetables and other vegetables to keep me full.
Usually i don't serve it with bread slices ,just this vegan omelette is filling enough.
Ingredients (for a small prying pan Φ20cm)
For the batter
2 tbsp rice flour (Not sticky rice )
2 tbsp chick pea flour (or corn flour or mixed)
1 tbsp brewer's east
a pinch of turmeric ,black salt, pepper,
1/3 baking powder ( Optional )
1/2 cup water (125ml)
2 tbsp chopped fresh herbs
Other ingredients
1 cup sliced raw potatoes
1/2 cup chopped veggies of your choice (onion,greenbeans, carrot, seeds etc)
20ml EX olive oil in total. (about 10ml for each side)
STEP 1
Fry only potatoes first in a frying pan with 10ml olive oil.
Make them both side golden brown.
Potatoes need to be done before adding any wet ingredients into the pan.
Then add other veggies to stir fry a few minutes.
Add 5ml oil at the end.
STEP2
Mix all of the ingredients in a small bowl to create the omelette's batter.
Pour the omelette butter over the fried vegetables.
Turn the pan around to spread the liquid to the edges.
STEP3
When one side of the omelette is cooked, slide it onto a plate without turning it over.(It's very difficult to flip it on the pan, that is why)
STEP4
Coat the frying pan with 5 ml of oil.
