My first attempt to create fried shrimps ended up to be these fried oysters.
In Japan they are called Kaki-furai.
A dish consisting of panko-breaded deep-fried oysters.
I could have used Nori sheets instead of using toothpicks while frying process
but even without nori sheets they somehow already taste like a sort of seafood.
Ingredients for 20 pieces (4-5 servings )
A box of smoked tofu (175g x 2 blocks )
150g oyster mushrooms
Ingredients for the batter
150g soy yoghurt (non-sweet)
1tbsp garlic powder
1tbsp vegetable broth powder
1tbsp sweet paprika powder
+50g wheat flour
+125g cold water
Panko (about 100g of bread crumbs )
100ml heat stable oil in total
Additional salt&pepper
(Other ingredients )
Lime, bread slices
Strawberries,
Mixed green salad,peppery asparagus etc.
STEP 1
Slice tofu into wedge shape.
One block of tofu should become 10 wedges.
Tuck the mushrooms in there ,secure with a toothpick.
STEP 2 (for the batter)
In a bowl of soy yoghurt add all the spices and mix it well.
Then add flour and the water.
Mix with a spoon until it looks like crepe batter.
STEP3
Dip each wedges in the batter and the final coating is panko bread crumbs.
Shake off any excess coating.
STEP4
Heat oil in a small pan and shallow fry wedges
When one side is golden, flip it over then remove toothpick to be safe.
(It takes about 5-6minutes at 175℃ until they turn golden brown.)
STEP5
Transfer on a paper towel to remove excess oil.
Sprinkle some salt and black pepper.
Serve them with a big salad, grilled veggies, and some carb of your choice.
It can not go wrong with a squeeze of fresh lime juice.
(Traditionally they are served with some mayonnaise based sauce.)
