Vegan Haidari (High-Protein Soy Yogurt–Based)
Ingredients
200 g cold high-protein soy yogurt (Alpro)
1 tbsp olive oil, plus extra for drizzling
2 garlic cloves, finely grated or minced
2 tsp dried mint
20 g fresh dill, finely chopped
2 g salt
20 slices cucumber, finely chopped or very small dice
(Optional toppings)Chili pepper,black pepper rose, pepper mint leave etc
Instructions
Heat 1 tablespoon of olive oil in a small frying pan over low heat. Add the garlic and gently sizzle until fragrant, without browning. Remove from the heat and stir in the dried mint. Set aside to cool slightly.

In a bowl, combine the cold soy yogurt, salt, and chopped dill. Stir until smooth and well blended.

Add the garlic–mint oil to the yogurt mixture and mix thoroughly.
Transfer to a serving bowl. Drizzle with a little extra olive oil and sprinkle with chili pepper to taste.
Garnish with the chopped cucumber before serving.

Serving Suggestion
Serve chilled as a mezze dip with warm flatbread, pita, or alongside grilled vegetables and salads.
