Vegan Quiche with spinach

This recipe is made for a seasonal party.

If you want to whip up something easy and fast, skip this one.

Baking a quiche takes some time and effort.

However you can bake a quiche 1 day ahead of the event :)



The recipe for the crust.

Ingredients for the Φ23cm pan


220g wheat flour (Type 405)

40g EV olive oil

80g apple sauce

3g salt

A drizzle of olive oil for the step 6




Step1

Preheat oven for 190℃

Mix all the ingredients in a bowl.

Knead it with your hand. The dough will not get combined so easily and will create a lot of layers. But it's fine like that.

Try to just combine all the crumbs and make a big ball of dough.

It will not be a smooth dough.



Step2

When the ball shape is formed wrap it with a plastic foil.

Keep it in the fridge while mixing the filling in the next steps

or at least 10 minutes. (this step makes the rolling out process easier )




Step3

Place a cooking sheet and roll out the dough into a flat circle between the plastic foil and the cooking sheet.




Step4


Lift the dough gently and place it into your pie pan.

Poke holes in pie crust using a fork.





Step 5

Bake it for 15 minutes at 190℃

You don't have to place the baking beans, also known as pie weights.

This crust will not puff up so much.


Step 6

Remove the crust from the oven and apply just a drizzle of olive oil.

Don't skip this process if you want the pie crust bottom to remain crispy after adding the wet filling.



Step 7

Place it back in the oven .

Bake it for another 5 minutes.


Step 8

The crust is ready.

Set the oven for 180℃ for the next steps. (Because 190℃ is too hot )



Ingredients for the filling

1 cup +1/2 cups =15 blocks of frozen spinach(see the photo below)

1/2 cup sliced onion


★4tbsp almond flour

★2tbsp brewer's yeast (or nutritional yeast )

★1tbsp rice flour or cornstarch

★200g high protein soy yogurt (Alpro's)

★1tsp herb salt mixed spice (salty)

★1/2tsp turmeric powder

👉If you avoid vegan cheese ,add mushed soft tofu with a pinch of salt.


+5g of olive oil for the step 9

+Black pepper to taste

+Optional black salt (to make it eggy )


Step 9

Gentry heat the sliced onion and the spinach in a pot with or without oil.

When the vegetables are tender ,turn off the heat.

Add the rest of the ★ingredients and mix it well.

The filling is not hot but gentry warmed⇩



Step 9

Fill the crust with the filling.

Brush about 1 tsp of olive oil on top.

Bake it for 40-45 minutes at 180℃





Step 10

Let it cool before slicing the quiche so it's easy to slice.

Serve it with black pepper.






Quiche is perfectly good in the fridge for a couple of days.

Just warm it before serving the slices :)
