It turned out to be a great lunch with all lovely members.
Very nice teamwork beyond my imagination💚
I'm going to share the recipe as follows.
Vegan Shakushuka
This dish takes about 30mins!
And it is an easy, delicious brunch idea.
Ingredients for 2-3servings.

(for the tomato sauce)
2 tbsp tomato paste (60-70g)
500 g chopped fresh tomatoes
200 ml water
1/2 tsp black strap molasses or sugar
1 tsp cumin powder
1 tsp chili flakes of your choice
1 tsp sweet paprika powder
1 tbsp brewer’s yeast or nutritional yeast
1 red bell pepper(100g)
1/2 cup red onion
1 tsp chopped fresh garlic
1 tbsp olive oil for frying
1 tsp salt
( for 6 tofu egg white)
225 g medium firm tofu=half of 450g Asian tofu
20g cornstarch
1/4 tsp black salt
(for 6 vegan egg yolk)
Grilled orange bell pepper (220℃ 20-25mins)
EV olive oil or cold press rapeseed oil (as topping )
STEP 1
Start grilling an orange bell pepper in the oven (220℃)for 25mins.
STEP 2
Heat a small amount of oil in a frying pan and slowly saute onion and garlic.
When the oil is fragrant, add the spices and paprika.
This process takes approximately 10 minutes.

STEP 3
Add tomato paste and chopped bell peppers ,keep stir frying.


STEP 4
Add chopped tomatoes and water ,then let it simmer for 20mins.

STEP 5
Blend tofu, cornstarch, and black salt in a hand blender.
If your mixture looks like yogurt or pancake batter It is too runny🙅
If the tofu is runny, it will mix with the tomato sauce.
Make sure not to buy silky tofu.
This is a medium firm tofu (the normal Asian tofu )

When the tomato sauce looks like this, it’s time to add the tofu paste.
Use a wet spoon to scoop and divide into 6 equal portions.

Smooth the tofu paste with a wet spoon. Shape into a round flat shape.

How to make vegan egg yolk.

By the STEP 5 the bell pepper should be baked in the oven.
Peel the brown part and cut in to round shape to mimic egg yolk.

Drizzle some EV olive oil over these cute paprika egg yokes.

STEP 6
Place the rounded bell peppers on top of the tofu and cover the pan.
Steam this tofu eggs over low heat for at least 5 minutes.
Tofu will firm up.



Top with Italian parsley or herbs of your choice and it’s done!

Serve it with some fresh veggies and toasted garlic bread slices;)
Surprise your friends by making vegan eggs.

FAQ
You do not have any orange bell pepper?
Add some olive oil and turmeric in the tofu paste of STEP 3
and use it as a replacement of the grilled pepper.
It should look like this and not so bad👇
