We successfully baked our jacket potatoes along with plenty of delicious side dishes. And of course, we can’t forget the spontaneously created delicious mocktails!
They were made with about half of a fresh sour mango, half of a fresh pineapple, roughly 1 cup of coconut milk, 1 cup of soy milk, and a good pinch of cinnamon. The sautéed cinnamon banana was also a lovely touch.

If you’d like to recreate my glazed kaki, the dish is made with two kakis, sautéed with a drizzle of oil and a sprinkle of cinnamon powder. Then simmer them with 30 ml of dry white wine and two star anise, and finish by caramelizing with 2 tablespoons of sugar. (I usually make them with pears)
As always, most dishes are cooked spontaneously, but I do have a few recipes to share with you.
This orange sauce is made from the chili pesto, chopped red bell pepper and
coconut yogurt.
