Soup ingredients for 1 serving
Ingredients to prepare noodles
100g Spaghettini (Barilla no.03)
1000ml hot water
1tsp Kaiser Natron (for cooking )
For the bowl
1tsp roasted sesame oil
Black pepper to taste
For the broth
350ml hot water
1/4 tsp vegan broth (powder)
1tsp or 3g mushroom sauce
1tsp or 5g Gochujang
1tsp or 5g peanut butter (not crunchy)
1tbsp or 25g Miso paste
(total) 1/2 tsp of minced garlic and ginger
Topping ideas.
Mung bean sprouts (fresh or blanched)
Nori
Sweet corn (jarred)
Grilled Bok Choi/olive oil
Green onions

Step1
Prepare some toppings of your choice.
At the event we grilled some bok choi with a drizzle of olive oil until one side becomes nicely golden brown.
We also blanched some fresh mung bean sprouts for a few minutes.
(But you could stir fry them for a couple of minutes with a pinch of salt)





Step 2
Add all the broth ingredients for the soup in a sauce pan.
(This is a simple ramen recipe for1 hour event so we didn't roast ingredients ,but you could add some oil and roast these ingredients until fragrant)

Step 3
Add warm water(350ml) .
Slowly dissolve all the paste into the warm water.
(Be careful not boil the soup at this point to save miso flavor )

Step 4
(How to change pasta into ramen noodles)
Boil 100g of spaghettini in at least 1000ml water with 1tsp of natron (for cooking)


Please be careful not to add any natron for cleaning. This one is for cooking.
Boil spaghettini only with natron (without salt) for 6 minutes.
Rinse the boiled pasta under clean hot water at the end to remove natron.

Step 5
(Optionally warm the serving bowl with hot water. )
Drizzle some roasted sesame oil in the bowl.
Sprinkle some pepper.
Coat boiled pasta with sesame oil.


Step 6
Reheat the Miso based broth from the step3.
Pour it over the noodles, top with toppings of your choice:)

By the way you could always make-ahead toppings
but the Miso broth needs to be made just before serving noodles.
