Aubergine Momos (Steamed/Steam-fried)

Ingredients for 7 small dumplings
(For the filling )
1cup finely chopped aubergine
1/3cup finely chopped red bell pepper
1/4 cup finely chopped shallot or onion
1/4 tsp salt
+10ml oil
1/4 cup water
1/2 tsp soy sauce (light)
2tsp peanut butter
(For the wrappers)
80g wheat flour (405)
1/4tsp salt
30g beet juice
15g boiling water
1g oil (Olive oil)
+10ml oil for frying
(Mint sauce )
60g soy yogurt
1tsp freshly chopped mint leaves (3 mint leaves)
5g lemon juice or rapeseed oil with lemon flavor
1/4 tsp salt
Other material
Baking sheet
Steam basket with a lid
One big pan to place the steam basket.

Preparation
Start with the wrapper because the dough can rest while we make
the filling.
Add all the wrapper ingredients in a bowl.
Stir it with a stick first.
Then slowly kneed it with your wet hand for 100 times.
Drizzle 1-2 drops of oil then need it another 10 times.

Divide dough into 7 equal size balls.
Cover it to rest for about 20minutes.

Preparation
This is the blender free recipe.
Chop all the vegetables finely.

STEP 1
Heat small amount of oil in the pot.
Sautee all the vegetables with salt for about 5minutes minutes.
(Don't forget to add salt here it helps to cook aubergines)

STEP 2
Add the spices and peanut butter.
Pour in 1/4 cup of water and stir it.
Bring it to a boil then cover it with a lid.
Let it simmer for another 5minutes.



STEP 3
When the filling is almost like a paste texture it's ready. Let it cooled down.

STEP 4
Roll out the wrapper about the diameter of a tea cup.
Wrap 1tsp of filling each.


You can seal the wrapper with a fork or a stick to create a pattern.
Or just press it to seal.

STEP 5
How to steam momos
Rinse steam basket under cold water. (make sure not to burn it)
Place the steam basket in the frying pan.
Pour in some water.

Place momos on a baking sheet (brush oil on the sheet if you want to be sure)
Let it steam cook for 10minutes with a lid from cold water.
(The steaming process takes about 7minutes over a medium high heat with a good amount of steam, so the 2nd batch will take only 7 minutes, if you make more momos)

The steamed momos are done:)
You can eat these or fry them.
STEP 6
How to fry momos
Heat about 10g oil in the frying pan.
fry it until golden.
(One side takes about 1-2 minutes)


The steam fried momos are ready.
Serve it with a sauce of your choice :)
(Mint sauce )
60g soy yogurt
1tsp freshly chopped mint leaves ( 3 mint leaves)
5g lemon juice or rapeseed oil with lemon flavor
1/4 tsp salt

How to freeze momos.
Let it cool down after the steaming process.
Wrap each one of the momos with a plastic wrapper.
(Momos will stick together if you don't wrap them individually )
Freeze them.
