Sweet Potato Momos (Steamed/Steam-fried)

Ingredients for 7 small dumplings
For this recipe I used just one small sweet potato.


(For the filling )
1cup+1/3cup diced sweet potato
1/2 cup boiled chickpeas (canned)
500ml water with 1tsp salt for boiling sweet potato
1/2tsp tomato paste
1/2tsp thyme(dried)
1/2tsp vegan broth (powder)
(For the wrappers)
80g wheat flour (405)
1/8tsp salt
1/8tsp turmeric powder
45g boiling water
1g oil (Olive oil)
+10ml oil for frying
(Mint sauce )
60g soy yogurt
1tsp freshly chopped mint leaves ( 3 mint leaves)
5g lemon juice or rapeseed oil with lemon flavor
1/4 tsp salt

Baking sheet
Steam basket with a lid
One big pan to place the steam basket.

Preparation
Start with the wrapper because the dough can rest while we make
the filling.
Add all the wrapper ingredients in a bowl.
Stir it with a stick first.
Then slowly kneed it with your wet hand for 100 times.
Drizzle 1-2 drops of oil then need it another 10 times.

Divide dough into 7 equal size balls.
Cover it to rest for about 20minutes.

STEP 1
Boil diced sweet potato for 5minutes in the pot of salty water.
( 500g water/1tsp salt) Then add 1/2 chickpeas.
The chickpeas are already cooked but if you boil them for a couple of minutes
it becomes easier to be mushed in the next steps.

When the sweet potato is cooked ,drain water.

STEP 2
Add all the spices in the pot of cooked sweet potato and chickpeas.
Mush it roughly.

STEP 3
Roll out the wrapper about the diameter of a tea cup.
Wrap 1tsp of filling each. If you want to see the how to wrap it.

How to steam momos
Rinse steam basket under cold water. (make sure not to burn it )
Place the steam basket in the frying pan.
Pour in some water.

Place momos on a baking sheet (brush oil on the sheet if you want to be sure)
Let it steam cook for 10minutes with a lid from cold water.
(The steaming process takes about 7minutes over a medium high heat with a good amount of steam, so the 2nd batch will take only 7 minutes, if you make more momos)

The steamed momos are done:)
You can eat these or fry them.
STEP 4
How to fry momos
Heat about 10g oil in the frying pan.
Fry it until golden.
(One side takes about 1-2 minutes)


Leftover ingredients can be upcycled into sandwiches:)
