Azuki rice (Instant pot recipe)

This is an Instant pot recipe.
If you don't use a pressure cooker , skip this one because the method is unique.
I grew up eating this kind of Azuki bean rice in Japan.
But I have never shared this recipe in public events in Germany as
"Typical Japanese foods " taste too bland for most people.
But this food is sooo rich in antioxidants that keep you young and healthy:)
As I live in Germany I updated my recipe with Jasmines rice recently.
And this is a quick recipe without soaking.
Ingredients for 3-4 portion
50g Azuki beans (raw)
250g white Jasmine rice
(Water A )
500ml +5g salt
(Water B)
300ml
Preparation
Rinse short grain rice very well and strain it.
STEP 1
Add 500ml water and 5g in an instant pot ( Pressure cooker )
Rinse Azuki beans and pressure cook them until al-dente for 15 minutes.
STEP 2
Strain Azuki beans.
Discard the dark water.(WaterA)
STEP3
Add strained Azuki beans ,rinsed Jasmine rice and add water (B)= 300ml
in the instant pot.
STEP 4
Pressure cook it for 12 minutes( =Normal rice cooking mode )
The rice should look pinkish and the color comes from the beans.
STEP5
Serve it with some sesame seeds.
