Azuki rice (Instant pot recipe)

This is an Instant pot recipe.

If you don’t use a pressure cooker, you can skip this recipe — the method is tailored specifically for one.

Ingredients (3–4 servings)

  • 50 g azuki beans (raw)

  • 250 g white glutinous (mochi) rice

Water A

  • 500 ml water

  • 5 g salt

Water B

  • 250 ml water

Preparation

Rinse the rice thoroughly and soak it in a bowl of water while you cook the beans.(You don’t need to measure the soaking water.)

Step 1

Add Water A (500 ml water + 5 g salt) to your Instant Pot or pressure cooker.Rinse the azuki beans and pressure-cook them for 15 minutes, until they are just al dente.

Step 2

Drain the rice using a sieve.Then drain the azuki beans directly over the rice so the rinsing water lightly dyes the rice red.

Step 3

Place the drained rice and azuki beans into the Instant Pot.Add Water B (250 ml).

Step 4

Pressure-cook for 15 minutes.The rice should turn slightly pink — the color comes naturally from the beans.

Step 5

Serve the rice topped with a sprinkle of sesame seeds.

If making onigiri🍙, use about 125 g of rice per onigiri.

With this recipe, you'll be able to create about 6–7 onigiri.
