Basmati rice with vegges & raisins

This rice dish full of vegetables is very simply flavourd but is a nice side dish to complement the main dish:)


Ingredients for 3 servings


180g Basmati&wild rice (rinsed)

1/3 cup red bell pepper

1/3 cup carrot

1/3 cup red onion

1/4 cup raisins

360ml water

1tbsp olive oil


1/4 cup parsley

Lemon juice and some salt to taste


Step1

Heat the olive oil in a frying pan and fry the onions first.






Step2

Add the rest of the veggies ,then raisins.

Stir-fry them for about 3 minutes.




Step3

Add rinsed rice into the pan , stir-sry them before adding water.






Step4

Add all the water and some salt.(about 0.5tsp)

Bring to a boil over high heat.

Once boiling, reduce heat to low.Let it simmer with a lid for 8mins or so.

(If the lid does not have a steam hole, leave a slight gap.)



Step5

Once the rice has absorbed the water, turn off the heat and steam for another 5mins with a lid.

Finally, add lemon juice and herbs to taste.
