Coconut Peanut Somen Noodles

👉Somen is usually served cold so this is a kind of a noodle salad.
Ingredients for crunchy topping
1 (200g) small jar
1/4 cup shredded coconut flakes
1/4 cup store bought roasted peanut (but not salted)
1/4 cup store bought fried onion
Toast shredded coconut flakes and peanuts over a low heat until
white coconuts turn golden brown.
Remove from the heat.
Grind roasted it with roasted onion in a stone grinder.

Ingredients for peanut harisa sauce.
This sauce is enough for 2-3 servings of noodle dish.
(Just mix all the below condiments )
30g peanut butter
30g soy sauce
10g balsamic vinegar
10g sugar
5g harissa (chili paste)
+30g plane based milk to add later ( soy milk or coconut milk)
At the event of April 2025 I made this sauce with coconut milk.


Ingredients for noodles
2 bundle (150g) of somen noodles for 2 servings.
About 1500g of water
(Prepare any fresh toppings of your choice)
Basil leaves
Coriander leaves
Baby spinach
Radish sprouts etc
How to prepare noodles.
Boil a pot of water(without salt).
Add 2 bundles of dry somen noodles in the boiling water, stir occasionally ,
Boil noodles for 1 to 2 minutes or according to the package instructions.
When the noodles are done, rinse them under cold water and drain them.
Serve noodles in a bowl with herbs, salad etc.
Lastly combine the noodles with sauce and the toppings :)
