Ehomaki Sushi Rolls

Ehomaki sushi rolls are no ordinary sushi.
They are large, uncut rolls traditionally eaten during Setsubun, a festival that marks the transition between seasons.
But at my workshop I usually slice them so it's just easier to eat for most of us.
Ehomaki is also a Seven Gods of Fortune / Happy direction sushi.
That is why we would like to add 7 different filling in one roll.
This year (2025) 's happy direction is West-Southwest.
So if you want to follow the tradition, grab your sushi without slicing.
And eat it like the way you eat a burrito ,facing West-Southwest.
Ingredients for 3 big Ehomaki sushi rolls
(each nori sheet contains 200g steamed rice and become 8 slices )
Ingredient for sushi rice
350g dry short grain white rice
(cook with 700g water if you use a normal pot /420g water for a pressure cooker )
👉600g cooked rice is enough or 3 big Ehomaki rolls.
Add 1tbsp sushi vinegar into a bowl(200g) of freshly steamed rice and mix it.

At the event we used this kind of rice and sushi vinegar(already seasoned).
Yes ,you can use" Milchreis" to make sushi rice.


For the fillings.
Choose any 7 items to make a roll colorful.
At the event of 2025 we decided to go with 👇
★Roasted bell pepper (roasted)
★Pickled cabbage or beets
★Cucumber
★Avocado
★Roasted chick pea omelette (baked)
★Tempeh (Sautéed/baked )
★Carrot (raw/cooked)


How to roast a bell pepper
Slice a pepper into half. Remove seeds.
Roast it for 20 minutes at 200℃.
Peel the skin and slice them into the ribbon shape.



How to bake a chickpea omelette.
Mix 100g chickpea flour with 280g water in a container.
Let it ferment for 4hours to overnight.
Add 20g olive oil and 1/2tsp black salt in the batter just before baking it.
Apply 5g olive oil on the baking tray.
Bake it for 30 minutes at 200℃.
Slice omelette into sticks.




How to Sauté tempeh
200g tempeh (non flavored/bought at GoASIA )
+10ml oil for sautéing
(Marinade)
2 tbsp soy sauce
1tbsp roasted sesame oil
1/2 tsp pinch of cumin powder
1/2 tsp smoked paprika powder
Slice a tempeh block into 12 sticks.
Marinate tempeh sticks for at least 15minutes or longer.
Sauté tempeh sticks until golden.( You could also bake them in the oven)



We also added this jarred red cabbage for the purple color.


How to roll Ehomaki in 3 steps.

Step1
Prepare all the toppings and a bowl of sushi rice.
(=200g steamed rice/1tbsp sushi vinegar)
Slowly spread the sushi rice on a nori sheet with a wet spoon.
Leave the top 2cm of Nori sheet rice free.
(Optionally place just some pieces of rice because they seal the roll very well )

Step 2
Place 7 toppings of your choice in the center of the rice layer.

Step 3
Roll it up and press it lightly to stabilize the shape using a bamboo mat.
(or a cooking sheet/ a dry cloth etc)

In a few minutes the roll becomes firm enough.
Use a sharp wet knife to slice it into 7-8 pieces.

Serve it with some sauces of your choice :)

Enjoy your Ehomaki ,while facing a lucky direction of the year. (West-South west)
