Gochujang stir-fry sauce

This is my another meal prep sauce recipe.
Just mix all the ingredients in a jar.
Store it in the fridge.
When I make a stir fry, I usually only use 1/4 cup of this sauce for
400g (or 2 cups ) of veggies.
Ingredients for the sauce.
1/2 cup warm water
1/8 cup gochujang
1/8 cup tomato paste(to adjust the spice level)
2 tbsp raw cane sugar
2 tbsp light soy sauce
A pinch of black pepper

300g aubergine
1tsp salt and 1tsp olive oil(for the preparation of Aubergine)
100g Asian fried tofu (rinsed)
10ml roasted sesame
Chopped Chives
1/4 cup of the gochujang stir fry sauce
How to make this stir fried aubergine.
STEP 1
Massage and shake chopped aubergine ,1tsp salt and 1tsp olive oil in a ziplock bag. Set it aside for 10mins.
STEP 2
Rinse fried tofu with some boiled water to remove excess oil and slice them.


STEP3
Rinse salted aubergine slices with cold water.
Squeeze water out.

STEP 4
Warm a drizzle of oil on a frying pan.
Fry aubergine about 5mines each side.
If you press with a small lid just like this picture.
They turn brawn really quickly.


STEP 5
Fry sliced tofu ,chopped garlic and ginger at this point.

STEP 6
Finally pour in 1/4 cup of gochujang stir sry sauce over.
Optionally add a bit of "starchy water" to thicken it.
(In the workshop we added 1tsp of potato starch with 1tbsp of cold water
at the end. _

STEP 7
Sprinkle some toppings such as roasted sesame seeds and chives.
