Grilled beans& veggies

This is one dish that can be made with a minimum of fuss for a luxurious appearance.
We made this dish as a side dish at a workshop:)
Ingredients (for 4 servings )
400ml (canned) diced tomatoes
400ml (canned )baked beans
1tbsp olive oil
1-2tsp salt (depends on the salt content of the canned ingredients)
1tsp dried herbs(kräuter der provence)
3-4 potetoes
2 fresh tomatoes
1 zucchini
1 small egg plant
Topping
Some fresh thyme
2 cloves of garlic
20ml olive oil
1 tbsp brewer's yeast
Salt, pepper

Step 1
Mix a can of diced tomatoes and a can of baked beans in a baking dish.
Add 1-2 tsp salt, 1 tbsp mixed dried herbs, 1tbsp olive oil,1tbsp brewer's yeast.
(The salt level should be adjusted ).

Step 2
Pre-heat oven for 200℃
(Boil potatoes for 20 minutes and then allow them to cool first.
Otherwise, raw potatoes would require an hour to be cooked in the oven!)
Step 3
Slice veggies of you choice.

Step4
Arrange the colors in a regular pattern.
Place two thyme sticks on top of sliced veggies.
Sprinkle 1tbsp Brewer's yeast, and some salt, pepper.

Step 5
Bake the dish for about 40-45mins in the oven. (180℃)
Step 6
Just before the dish is ready.
Heat about 20 ml olive oil in a frying pan to roast the garlic.

Step 7
Pour the garlic oil over the grilled vegetables and top with chopped herbs.

Done!
