Quinoa salad with mixed herbs

Ingredients for 3 servings
Juice from 1/2 lemon
1tsp finely chopped lemon zest
1/2 tsp cumin powder
1/2 tsp sumac
1/2 cup dill
1/2 cup mint
1/2 cup parsley
3 mini bell pepper (100g)
1 mini cucumber (without seeds 100g)
1tbsp EV olive oil
1/2 cup (dry) quinoa
(A) 1tsp salt and 1L water
(B)1/2 cup vegan broth
(or 1/2 tsp vegan broth powder with 1/2 cup water)
How to boil dry quinoa to remove the bitter smell.
(Nobody likes mushy quinoa! Here's the way to do it right)
Step1
Rinse 1/2 cup of quinoa under cold water very well.
Step2
Transfer rinsed quinoa into a pot.
Add (A)1tsp salt and 1L water .
Bring it to a boil first and cook for only 5minutes.

Step3
Strain quinoa and rinse under cold water.
Discard the cloudy water (A) .
Step4
Transfer rinsed quinoa into a pot.
Add (B)1/2 cup vegan broth.
Bring it to a boil and then let it simmer for 5minutes.
Step5
Turn off the heat.
Place a lid and let it steam for 5minutes.
Fluff the quinoa with a spoon.
Let it cool first then squeeze lemon juice.
Step6
Chop all the ingredients.
If you are adding cucumbers, remove seeds.
👉Perhaps you need to prepare a salad for a party?
Don't add salt with vegetables ,and please make sure to add enough salt at the step Step2〜3.

Step7
Mix everything in a big bowl.
Store it in the fridge for at least 30minutes before serving.

Quinoa salad can last 3days in the fridge when stored in an airtight container.
