Red Lentil & Vegetable Stew

The recipe from the WS 25.11.2024.


Preparation

Rinse 1/4 cup of red lentils.

Soak the lentils in cold water for 1hour.



Ingredients for 6 small portions (or 3 main dishes)


(A) 200g finely chopped aromatic vegetables

such as onion, garlic, parsley ,celeriac.

20 g EV olive oil


(B) 400g diced vegetables of your choice

zucchini, bell pepper, carrot ,celeriac.


(C) About 1/2 cup Soaked lentils (=1/4 cup red lentils )


(D) 250g chopped fresh or frozen tomato,

1-2 tbsp tomato paste (depends on your taste)

500ml water ,5g salt, 5g vegan broth (powder)


(E)100g diced starchy vegetables

such as pumpkin, potato or sweet potato


(F) 1tsp oregano (dry ) , 1/2 tsp cumin powder

1tsp pickled cappers or olives (chopped).

+Black pepper to taste, fresh herb of your choice.


Step1

Warm some olive oil in the pot.

Sautee finely chopped aromatic vegetables over a low heat until fragrant.


Step2

Sautee diced vegetables and the strained red lentils for a few minutes.


Step3

Add tomato paste, tomatoes ,salt and 500ml water.

Add also starchy vegetables and the (F) spices.

Bring it to a boil and let simmer for 20minutes.

Usually it takes about 25 minutes from the point of adding lentils.


Step4

When the starchy vegetables are tender it's ready.

Serve it with ground pepper and freshly chopped herb.
