Sesame Noodle Salad

This dish is called Hiyashi-chuka in Japan.
It's a Chinese-style Japanese dish consisting of chilled noodles with various toppings.
I veganize any typical Japanese food but if you want to see the original style
Ingredients for 3 servings

for dressing
30g light soy sauce
30g tahini (sesame paste)
10g vinegar (creamy balsamic vinegar)
10g raw cane sugar
1tsp Toban Djan
1tsp minced ginger
240g dry Noodles of your choice (for example pasta noodles) for 3 servings
1 tbsp Kaiser Natron (bicarbonate)
A pot of water for boiling pasta
5g roasted sesame oil (optional)
5g lime juice (optional)
100g carrot (sliced and steam fried with 5g oil)
100g cucumber(sliced)
3tbsp Radish sprouts
3tbsp green onions (chopped)
6-9 green beans (boiled)
1 medium size tomato(sliced)
100g a bundle of enoki mushroom (1tbsp cornstarch, 15g oil,5g soy sauce)
Chickpea egg
(=35g chickpea flour,80g soy milk, 1tbsp ground flax seeds, 1tbsp brewer's yeast,
1/8 tsp turmeric,1/8 tsp black salt,and 15g heat stable oil for frying)
How to make chickpea egg slices.
Pour in 40g of soy milk into the dry ingredients, stir it well. then add the rest of soy milk. Stir it until smooth.

Heat up some oil and fry the eggy batter all in once.
Flip it once bubbles appear on the surface.
Keep the crape on a cutting board to cool down.
Slice it when it's cooled.


How to make crispy enoki mushroom topping
Cut off the stem of enoki mushroom but only the brown area.
Sprinkle cornstarch on a bundle of enoki mushroom.


Heat up some oil on a frying pan.
Don't add salt at this point.
Grill one side until golden, you can press it with a spatula.
Flip it and grill the other side until golden.
Repeat one more set until all the water comes out from the mushroom and get
really crispy.

Brush or drizzle some soy sauce.

Boil pasta with water with 1tbsp of bicarbonate for one minutes longer than usual.
(If you are boiling pasta, boil about 8 minutes)
Rinse under cold water.
Drain water and drizzle some roasted sesame oil and lime juice to add a subtle flavor (You could cool the noodles in the fridge)

Prepare toppings
Slice a tomato, green onion, cucumber, carrot etc.
(I steam fried carrots, and lightly boiled green beans. )



Place all the topping on marinated noodles.
Drizzle about 2tbsp of sesame dressing.
