Vegan Gnocchi (Basic)

Gnocchi is a very simple dish once you get used to make them.
But It's not as easy as how it looks if it's your first attempt.
Also not many people share an exact amount of ingredients on internet.
To create this recipes, I cooked gnocchi so many times with different wheat and potatoes.
And this is my best gnocchi recipe to share with you" in Germany".
Gnocchi for 4 servings
400g Potato (after cooked and mushed)
160g EDEKA'S wheat flour type 405 ( this wheat is about 12%protein)
5g salt (max 6g)
Pepper to taste
A drizzle of olive oil (for a tray)
A pot of water (with some salt)
Sauce of your choice for example a simple tomato sauce
(I combined the tomato sauce + red cabbage dish)
STEP 1
How to boil potatoes.
Boil your "mehlig kochend "potatoes in a pot of boiling water without salt
for 40minutes.(start with a cold water to cook potatoes evenly )
You could make a tomato sauce in the meanwhile.

In Germany there are also "festkochend "potatoes but they are too waxy to make gnocchi.
Please choose these "mehlig kochend "potatoes.
Once you got the right floury ones.
Don't try to chop or peel potatoes to shorten the boiling time.
It will go waste.
STEP 2
40 minutes later check the potatoes by insertign a bamboo skewer into them.
Peel potatoes while they are still hot. (be careful🧤)
Mash well with a fork. Don't kneed or blend them or they will go waxy.
Just spread them on a big plate.
The potatoes need to be cooled enough before mixed with flour.

STEP 3
Mix salt with flour in a big bowl very well.
Add pepper if you would like.

STEP 4
Spread mashed ,cool potatoes on the flour bed.

STEP 5
Just mash them vertically with a fork without kneading like a bread.
The whole thing should be flattened on a big plate.

STEP 6
When the whole mixture is moistened, make it into one big ball.
You can knead this just enough to make it one big ball shape.
(wet your hand with water if the dough is sticky)
STEP 7
Divide into four equal parts.
You can knead this just enough to make small ball shapes.
(Start boiling a pot of water with some salt )

STEP 8
Make a snake shape. (about 20-25cm each)
If it breaks easily in the shaping process, knead it just one more time
so the dough will be more stable to form this shape.

STEP 9
Slice them in to a candy size pieces.
If you cut them into 2cm size it will be at least 2.5cm after being boiled.
You can use a fork to make a pattern, but this time I boil them as is.

STEP 10
Boil them in a boiling water with 1% salt right after the step9 for about 2 minutes.
(Or don't scoop gnocchi until they float.)

STEP 10
Brush a dish with a small amount of EV olive oil.
When they float to the surface, scoop them out, drain and place them on the plate.


When everything is boiled, heat up your tomato sauce in a frying pan.
Add boiled gnocchi in the sauce:)
