Soba Noodle Salad (Meal Prep)

Not all the soba noodles are made from the same ingredients.

What I personally like is this ones or the ones that contains yam potatoes or some sort of starch as a binder.
If the noodles are made of 100% or nearly 100% buckwheat, these are not a suitable kind for the salad.
(The boiled noodles will break into many small noodles...!)
So please check the ingredients first.
Ingredients for 3 portions
225(75g x 3 ) dry soba noodles.
About 1000ml water for boiling noodles.
Chopped coriander leaves (topping)
Roasted sesame seeds(topping)
for the dressing (just mix all the ★ingredients in a bowl)
★1tbsp Chili oil (sesame oil base)
★1tbsp light soy sauce
★1tbsp sushi seasoning vinegar
★1tbsp peanut butter

Ingredients for the topping
500g of fresh vegetables
(Aubergine, bell peppers, carrots, zucchini etc)
(Marinade)
1/2 tbsp roasted sesame oil
1/2 tbsp light soy sauce
1/4 tsp salt
Step 1
Preheat oven for 200℃
Transfer all the marinated vegetables on the sheet pan.
Bake it for 25 minutes at 200℃

Step2
Boil a pod of water first. (don't add any salt)
And then add soba noodles.
Boil them for 3 minutes or so.
Step3
Drain water and rinse the noodles under cold water.

Step4
Dress these cooled soba noodles in a big bowl.

Step5
Serve the seasoned cold soba noodles with grilled vegetables
.coriander leaves and sesame seeds.
