Soy Yogurt Sauce with Pomegranate & Pistachio

Ingredients:

  • 125g soy yogurt (unsweetened high protein soy yogurt )

  • 1/8 tsp salt

  • 2 tbsp pomegranate seeds

  • 10 pieces of roasted and salted pistachios (chopped)

  • 1/4 cup fresh parsley, mint

  • 1tsp olive oil

  • Chili flakes , black pepper to taste)


Instructions

  1. Prepare herbs and toppings

    • Chop the parsley and mint.

    • Roughly chop the pistachios if not pre-chopped.


  2. Mix the base

    • In a bowl, whisk together the soy yogurt with salt


  3. Garnish and serve

    • Drizzle a little extra olive oil on top.

    • Sprinkle the pomegranate seeds ,pistachios and chopped herbs for a colorful finish.

🍴 Serving ideas

  • As a dip with bread ,veggies or vegan meat balls.

  • Drizzle over grilled veggies or falafel

  • Alongside rice or grain bowls
