Today I’m going to introduce a budget meal idea.
I have only tofu and spinach at home because I have not done any shopping.
"Spinach and tofu bacon aglio olio"
Spinach and tofu bacon aglio olio
Ingredients for 2 portions
200 g spaghetti
1 cup boiled and squeezed spinach (=150 g fresh)
2 tbsp minced garlic
2 tbsp olive oil
1 tsp chilli flakes
1 tbsp soy sauce
1tbsp brewer’s yeast ( or nutritional yeast)
salt and pepper
140 ml pasta cooking water
Ingredients for toppings
80 g tofu, spices.(details are given below)
Preparation
Cook the pasta al dente in slightly salted water.
Keep 140 ml of the pasta’s cooking water for the sauce.
Let’s start with a simple topping while you are boiling some pasta.
So check this out.
The tofu on the left is grated with a fine grader then the tofu on the right.
It looks like cheese, doesn't it?Tofu on the right is going to be seasoned like bacon.
(30 g for the tofu cheese and 50 g for the tofu bacon)
Tofu topping (A)
30g finely shredded tofu (Natur tofu )
1tbsp brewer’s yeast ( or nutritional yeast)
Some lemon juice
A pinch of salt/garlic powder/pepper
Just mix all the ingredients with a spoon.
Now comes the tofu bacon topping.
Tofu topping (B)
50g shredded tofu (Natur tofu )
1tbsp brewer’s yeast ( or nutritional yeast)
2tsp smoked paprika powder
2tsp olive oil
1tsp garlic onion mixed spice
1tsp soy sauce
A pinch of cumin powder /salt/pepper
Mix all the ingredients with a spoon on a parchment paper and a baking tray.
Then bake it in the oven at 190°C for 10-15 minutes.
Wash spinach, blanch in boiling water for 1 minute, drain and squeeze.

Heat 2tbsp olive oil in a frying pan, slowly fry the garlic at a low temperature and
infuse the garlic flavour to the oil.
Be sure to fry at a low temperature, it will start to brown like this after about 5 minutes.
Then turn off the heat and add chili flakes.
Drain the cooked pasta (do not rinse the pasta with water ) and fry it in a frying pan in the garlic chili oil.
Add all the following ingredients and dress on high heat.
1 tbsp soy sauce
1tbsp brewer’s yeast ( or nutritional yeast)
A pinch of salt and pepper
140 ml pasta cooking water
When the pasta is seasoned, transfer only the pasta to a plate.
Leave the cooking liquid in the pan.
Toss the drained spinach in it.
Season with salt and pepper.Once the spinach is seasoned, place it on the pasta.
Finally, top with two tofu toppings and chopped Italian parsley.
