Sunflower Seeds Cheese

Ingredients for 1cup (240ml) of vegan cheese
1/2 cup sunflower seeds (=dried)
1/2 tsp salt
1/2 tsp garlic powder or onion powder
1/2 tsp any spice of your choice (Greek or Italian herb mix etc)
A pinch of pepper
A pinch turmeric
10g oat meal (optional)
(to add later )
+1 tbsp EV olive oil
+Juice of 1 large lime or 1/4 lemon
★60 ml water
★1 pack agar agar powder
+60 ml soy milk or plant based yogurt
(optional topping )
+ Pepper ,dried cranberry or herbs of your choice (dill, basil etc )
Preparation
You don't have to soak sunflower seeds but rinse them under water
until the water stays clear. (just like rinsing rice)
Step 1
Combine ★ in a small saucepan.
Bring it to a boil ,then cook it for at least 2 minutes.
Agar agar tends to form lumps, so stir it well.
(It needs to be activated in really hot water ,be careful not to burn your hand )

Step2
Turn off the heat.
Pour in soy milk in the hot agar agar water.

Step3
Add lemon juice and EV olive oil and the rinsed sunflower seeds in a tall cup.
Transfer the liquid into it.

Step 4
Blend the ingredients with using a hand blender until it becomes a hummus-like texture.

It starts to firm up as soon as the temperature drops.
Cover a cup with a wax paper. (or use a glass jar or a silicon cup )
Transfer the paste into the cup and wrap it well.
Make sure the paste is no longer very hot.
Store it in the freezer for 20-30minutes.
Step 2
Serve it with pepper and freshly chopped herbs or chopped dry fruits.

Enjoy your sunflower cheese as a snack ,topping for bread or with salad :)
