Workshop memories of 19.08.2023 Shumai




Another great lunch with all lovely members.

We are going to make a table tennis group for sure.

I would like to share some of the recipes from this workshop.

Today’s Shiumai recipe 👇






Vegan Siu Mai ( for 12 big balls)


For the filling 200g medium firm Asian tofu(defrosted) 1/2 cup carrot pulp or shredded carrot 1/4 cup walnut 2tbsp corn starch

1tbsp brewer’s yeast (or nutritional yeast)

1tsp psyllium husk


1tsp shiitake powder(blended dried shiitake) 1/3 cup bamboo shoot (jarred) 1/3 cup chopped onion 1tsp ginger ,garlic and pepper 1tbsp dark soy sauce (or tamari)


About 1tbsp oil for steam frying.

Vegan wantan wrapper (or rice wrapper) 12 wrappers


STEP 1

Crumble defrosted tofu.


STEP 2

Mix all the filling ingredients in a big bowl.


STEP3

Scoop with a disher and divide into 12 equal portions.

When scooping, press down with fingers and squeeze tightly.


STEP 4

Place one wonton wrapper on each domed tofu filling.

Press the wrapper down firmly toward the bottom.

STEP 5

Make sure that everything is packed tight before being cooked.


STEP 6

Let's steam Shumai.

(I used a frying pan to boil water and 2 bamboo baskets)

Boil water until the steam comes out.

Place Shumai in a steamer basket, cover with a lid and steam for 12 minutes over medium heat.


Note

Don’t forget to coat the paper cups with a small amount of sesame oil to prevent the wrappers from sticking to the paper cups.

Or use leafy veggies instead of paper cups.



Steamed Shumais are done!

To make a simple dipping sauce I just mix vinegar and soy sauce in 1:1 ratio.

In the workshop we also added some pomegranate molasses.



STEP 7

Let’s steam fry Shumai.


The result should look like this.


Turn Shumai from step 6 upside down and fry the surface

with a small amount of oil. It takes about 3-4 minutes.


Flip over and cook the wrapper side for 2 minutes.



STEP8

Add about 30ml water and place a lid. Let them steamed for 5mins






This is the vegan wrappers I used for this recipe.

Some wrappers contain eggs in the ingredients so please check the list of

ingredients when you go shopping.


Optional recipe with rice papers.

Pack the filling with wet rice paper just like how you make summer rolls, then fry them.





Serve it with some cooked grain, pickled vegges, fresh salad and the dipping sauce of your choice.
