Tom Ka Tofu

This is a vegan version of traditional Tom Ka Gai

Here we add tofu instead of chicken.


So this is Tom (to boil) Ka(the name of the ginger like spice) Tofu.

There are a lot of exotic Thai herbs in the recipe.

Those hard herbs are not to be eaten but they are usually served with your soup.

You could strain them out before serving.



Ingredients

for 3 side dish servings.


1 small red chili (for making chili oil)

1 tbsp olive oil

1 ripe fresh tomato 

225g =Half a pack of medium firm tofu


1 tsp salt

200 ml full fat coconut milk

400 ml water

Frozen Thai herbs for the soup in total of 60g

  (8 slices of Galangal, 3 lemongrass, 5 lime leaves,2 red small chillies)



1 tbsp soy sauce

1 tsp vegan oyster sauce (sweet)

A handful of bok choy and /or white oyster mushrooms


(Topping of your choice)

Lime juice /fresh lime slices/coriander leave



STEP 1

Rinse vegetables and slice tofu.

Warm some olive oil on a frying pan ,start frying tofu.

STEP 2

Fry tofu until golden.

Each side will take just a few minutes.

STEP3

Add your tomatoes and red chili to the tofu.

Let them cook until the tomatoes get soft and add red color to the oil.

Basically we are up cycling the oil from frying tofu to make chili oil here.

This way we don't have to drizzle extra chili oil at the end.

STEP4

Add 200ml of coconut milk and 400ml of water.

1tsp salt, 1tbsp soy sauce, and 1tsp mushroom sauce(or sugar)

Be careful not to boil the coconut milk as this will cause it to separate.

Let it simmer.

STEP5

(How to add herbs.)

If you are lucky to have fresh leaves , tear them by hand and throw them in.

There are frozen leaves from an Asian supermarket so I crumpled with hand so they smell even better.

You may want to roll the lemongrass on a chopping board to release the flavour.

Add the thick bottom part of lemon glass instead of hard top parts if possible.

After adding herbs the soup need to be simmered for about 15minutes.

STEP 6

Add light green part of pak choi and lime leaves.

If you are adding mushrooms , add them now.

Let it simmer for about 8 minutes.

STEP 7

Lastly add the dark green part of pak choy.

Done:)

Serve it with lime slice, coriander leaves, veggies or any toppings.
