Sweet Potato Gnocchi (Tomato Sauce)

Ingredients for tomato sauce for about 2 servings


400g fresh ripe tomatoes

5g chopped garlic

5g basil leaves

4g salt (1% of tomato weight)

1tbsp EV olive oil



Ingredients for sweet potato gnocchi

200g boiled sweet potato (about 1 medium size sweet potato)

80g wheat flour (type 405)

A pinch of salt (optional)

+2 tbsp extra wheat flour for the work surface.


(Water)

For boiling sweet potato

500ml water with 5g salt (1%)


For boiling gnocchi we need 750ml water with 5g salt(or less)

The salt amount seems a lot but it's mostly discarded.


(Topping )

2 green asparagus (boiled)

Fresh basil leaves




(Tomato sauce)

Step 1

Drizzle some EV olive oil in a frying pan.

First make garlic infused oil on low heat.

Step 2

Add half of basil leaves into the heated oil

Step 3

Add all chopped tomatoes and salt and cook it over medium high heat for about 10 minutes.

Step 4

Add the rest of the basil leaves into the tomato sauce. 

The sauce is done :)

(Sweet potato gnocchi for about 32 pieces)


Step1

Boil diced sweet potato in 1% salt water until fork tender.

It takes about 12-13 minutes.

Prepare 80g of flour and add a pinch of salt.

Step2

Weigh 200g of boiled sweet potato.

(Usually raw sweet potatoes become heavier after boiling process that is why we want to weigh it again)

Transfer this hot sweet potatoes onto the flour bed.

Step3

Vertically mush it with a fork.

(Don't knead it too much)

Form the dough into one big ball shape.

Step 4

Sprinkle some flour on your flat work surface.

Divide the dough into 2 pieces and form 2 logs so it's easier to make many small balls in the next step.

Create about 30-32 grape size mini balls.

(It's going to be a size of a cherry tomato when you boil them)

Step 5

Start boiling a pot of water for the next step.

Optionally create a pattern on each gnocchi by pressing a fork.

Step 6

Boil gnocchi for about 3 minutes or until they float on the surface.

Reheat your tomato sauce for the next step.

Optionally add sliced asparagus here.

Step 7

Scoop out boiled gnocchi and asparagus from the pot with a ladle and add them onto the reheated tomato sauce.

Gently stir it.

Step 8

Serve it with some green toppings :)
