Vegan arroz con lentejas (lentil rice)

1/2 cup of fresh herb looks a lot in the first image but after chopping it becomes as little as 2 tbsp.

Ingredients for 3 side dish portions
(Frying pan)
10ml olive oil
1/2 cup chopped onion (75g)
1/2 cup basmati rice (125g)
Ingredients to add later
1/2 tsp salt ,1/2tsp sweet paprika
2 cups of water
(Optional topping )
1/2 cup coriander or parsley
1/2 cup dried brown lentils (125g)
1/2 tsp salt for 500ml water (room temperature)
(Preparation of lentils)
Add rinsed dried brown lentils and salt in 500ml water.
First bring it to a boil, cook it for 15minutes.
Strain the lentils.


(Preparation of rice)
Just rinse rice before cooking.
Strain the rice.

STEP 1
Sautee chopped onion with some oil until fragrant.

STEP2
Add rinsed raw basmati rice and pre-boiled brown lentils.
Sprinkle salt and sweet paprika and stir it well.

STEP3

Pour in 2 cups of water.
Bring it to a boil.
Cook it over high heat for 10 minutes.

STEP4
And then let it cook over low heat for 5minutes.

The lentil rice is ready when it looks like this.

Fluff the cooked rice with a spoon.

STEP6
(optional garnish)
Mix chopped parsley or coriander
Serve it with herbs.
