Wonton soup & Workshop 07.01.2024




It was great to celebrate the New Year with you all.


At the event we made a big portion for a group.

But in this blog I list quantities that are easy to make at home for 1-2 people.

※ The filling vegetable can be anything else, feel free to replace ingredients.




Ingredients for 14-15 wonton dumplings

14-15 Vegan wonton wrappers


Filling

1/8 cup oat meal (instant oats)

1/4 cup boiling water

1tsp chia seeds


A pinch of pepper

1/2 tsp garlic powder

1tsp roasted sesame oil

2tsp soy sauce(light)

1tsp Mirin or sweetener (optional)

1tsp fresh ginger(optional)


1tbsp soaked and chopped Shiitake mushroom

1/8 cup shredded carrot

1/8 cup finely chopped bamboo shoots (jarred)

1/8 cup sauerkraut

1/4 cup shredded smoked tofu

1/4 cup finely chopped green onion




Ingredients for the soup.

( for 1 big ramen bowls)


100ml broth (boiled shiitake/kelp water)

100ml starchy salty water (see step 4 )

1tbsp soy sauce

A dash of roasted sesame oil


Seasonings for the chili oil

2tsp fermented black beans (chopped)

1tsp freshly chopped garlic

1tsp brewer's yeast

1tsp sesame seeds

1/3 tsp raw cane sugar

A pinch of pepper

+1tbsp heated oil (180℃ at least)



Preparation of Shiitake broth.

Soak about half handful dried shiitake slices in cold water (about 500ml )for a couple of hours.

Add 1tsp of ground Kombu kelp , then boil the water for 15mins.

If you don't have kelp,replace it with ground Nori sheet or vegetable broth.

Remove shiitake after they are softened.

Save 100ml of this broth for making this soup in Step7

Keep the rest in the fridge for your next cooking.





How to make this wonton soup


STEP1

First, place oatmeal and chia seeds in a bowl.

Pour boiling water into it.

Meanwhile, prepare the other ingredients.




STEP 2

Add the rest of the ingredients in the bowl of softened oatmeal.

Mix well with a spoon.


STEP3

Place 1 tsp of filling in the center of the wrapper.

Fold into a rectangle.

Press the corners together to form a hat shape.

(If it does not stick well, wet one side with water)




STEP4

Boil a pot of water, add some salt just like when you boil pasta.

Boil wontons for a few minutes until they float and become translucent.

Do not discard the boiled water as some of that will be added to the soup later.


STEP 5 How to prepare chili oil in a big bowl

Pour about 1tbsp of heated oil into these seasonings.

let the garlic sizzle first.


STEP 6

Then add pepper, sesame oil, and soy sauce.


STEP 7

Add boiled wontons into the bowl from the Step6.

Pour in 100 ml of the wontons' cooking water(starchy) and 100 ml of the warm shiitake mushroom/kelp broth.

Gently stir everything with a spoon.



Step 8

Top with green onions or other herbs as desired.






How to fry wonton

Fry in oil at 170-180℃ for 1 to 2 minutes without burning.

When crispy, drain off the oil and serve.
