I had the pleasure of hosting a vegan cooking meetup for our local group today.
It was such a rewarding experience to bring people together around healthy, plant-based food—even if some of us were meeting for the first time.
There's something special about connecting with others over a shared love of cooking and nutrition, and our kitchen quickly filled with great curiosity, and delicious smells.
We spent one hour preparing a flavorful lineup of dishes:
A Moroccan-inspired vegetable tagine, a hearty red lentil stew, and falafel using peanuts butter.
I’m sharing the recipes below in case you’d like to try them at home or weren’t able to attend.
These peanut falafels were a fun twist—adding richness to the traditional chickpea base.
(👉You can NOT replace soaked raw chickpeas with canned chickpeas 🙏)

This cozy red lentil stew was both simple and satisfying. It’s high in protein and fiber, and makes a perfect batch-cook meal for busy weeks.
You can freeze it too.
