WS Spaghetti Primavera

(My client wished to use Spaghetti for this session so it's Spaghetti primavera)

Ingredients for 3 main servings
In total 25g EV olive oil (10g and then 15g)
1cup zucchini
1/2 cup carrot
1/2 cup bell pepper
A pot of water (1700g)
Salt 17g
Spaghetti 250g
1 cup cauliflower florets
1 clove of garlic (sliced )
1/3tsp chili (chopped)
1tbsp of parsley (chopped
★200g pasta's cooking water (see the step 2)
★1tsp brewer's yeast (optional)
1 cup salad leaves (optional)
Step 1
(Sautéing topping vegetables )
10g EV olive oil
2 cups of vegetables of your choice for sautéing


Set sautéed vegetable aside and clear the frying pan.
You can use the same pan for the step 3.
Step2 (Boiling )
A pot of water for boiling pasta (1700g)
Salt for boiling pasta(17g) =1%
Spaghetti (pasta) 250g
1 cup cauliflower florets

For this recipe I decided to use cauliflower but you can replace this part with asparagus ,broccoli ,peas or green beans.
Boil pasta until al-dente while you make the sauce in a separate pan.
Step3
(Making sauce =Aglio e Olio)
15g EV olive oil
1 cleve of sliced garlic
1/2tsp chopped parsley(optional)
1/3tsp chili (optional)
Pour the olive oil into the saucepan and add the garlic slices and parsley.
Place the pan over low heat.
Let the garlic and parsley sizzle in the oil for a couple of minutes.
Make sure the heat is low to avoid burning the garlic.
And then add chilli pepper just before the step 4.



Step4
(Thickening the sauce from step3)
Add ★these and let the sauce cook over a medium heat.
★200g pasta's cooking water from the step2
★1tsp brewer's yeast (optional)
(Don't discard the rest of the water yet for the next step.)
Step5
Toss the pasta with the sauce over a high heat until the sauce gets thickened.
Add sautéed vegetables from the previous step.
If it's not salty enough for you add a bit more pasta's boiling water.
Step6
(Decoration)
Serve it nicely with some optional toppings such as
Salad leave of your choice , sprouts and chopped parsley
