Baked Chick Pea Crêpe

I believe this food is called "Farinata" and it's a traditional dish made from chickpea flour, olive oil, salt and water that originated in Genoa.


But I first found out about this seriously tasty food in a small Italian cafe in Berlin where you can enjoy variety of traditional Italian delicacies.

This is the original picture of farinata that surprised me the most.

It was phenomenal.

How can" just chickpea flour" become a tasty dish...?

Here is the recipe .


Ingredients for 6 snack portions. (Ø23cm)


125g chickpea flour

325g water

1/2 tsp salt

25g EV olive oil

Some more (5g) oil for the tray

Fresh rosemary leaves (optional)

Pepper


Step1

In a big bowl combine chickpea flour with cold water.

Whisk it well.




Step 2

(Don't skip this process to have a nice thick crispy crust)

Rest the batter for one night or at least 4 hours.

Make sure the batter is not too runny when you bake it.


Step3

(The next day. )

Preheat oven for 200 ℃.

Oil coat the baking tray.

If you don't have a non stick pan place a small round baking sheet.


Add salt and oil into the batter.

Whisk it well.





Step 4


Pour the batter into the pan.

Optionally sprinkle rosemary leaves.

(This food is flat, 1cm deep should be optimal )

Bake it until crispy for 30 minutes at 200 ℃.






Step 5

Optionally sprinkle pepper to taste.

Slice it to serve :)
