Filled Baked Peppers

Ingredients for 4 small servings ( 8 small pieces)
2 long red bell peppers
about 2 tbsp EV olive oil for frying and brushing
Some extra cornstarch for dusting
Sliced garlic from one clove of garlic
(for the filling)
1/2 cup oatmeal (dried)
1/2 cup dried soy schnitzel (Alnatura)
1 tbsp vega okonomiyaki sauce or brewer's yeast
1 tbsp cornstarch
1/2 cup of vegetables (onion,carrot ,celery,garlic etc)
1 tsp sweet paprika powder
1 tsp vegetable broth (powder)
2g salt
1 tbsp soy sauce (light)
1/2 tsp oregano or
A pinch of pepper, nutmeg
100g firm tofu
100g soy milk
(for the sauce )
4tbsp sugar free tomato ketchup
2tbsp soy sauce (light)
1tbsp white wine
1tbsp raw cane sugar (depends on the ketchup's sugar level)
Preparation
Preheat oven for 200℃
Slice one bell peppers, remove all the seeds.

STEP 1
Mix everything in a bowl.
Leave it for 5 minutes until the fried ingredients become hydrated.


STEP 2
Sprinkle some cornstarch on sliced bell peppers.
(So the filling becomes stable)

STEP 3
Roughly separate the filling into 8 equal portions.
Fill the peppers. Sprinkle some extra cornstarch on top.


STEP 4
Brush some olive oil on the surface.

STEP 5
Bake it for 15 minutes at 200℃


STEP 6
Warm olive oil in a frying pan.
Roast only the filling side over a medium heat until golden.
(Optionally add some sliced garlic at the end )


STEP 7
Mix all the ingredients for the sauce in the sauce pan.
Bring it to a boil.

STEP 8
The filled pepper is done :)
Serve it with the sauce.
