Perfectly Baked Aubergine & Zucchini

Let's bake aubergine and zucchini perfectly.
This recipe is made for an event in 2025.
For this recipe you will need a silicone baking sheet
and a baking tray.
Ingredients for 6 side dish portions
2 aubergines (round big ones) 600g
1 zucchini 300g
About 30ml olive oil for brushing
Salt to taste
(No need to preheat oven )
Step 1
Set the oven for 200 ℃.
Slice aubergines and a zucchini into 1,5cm thick rounds.
(Not thinner than 1,5cm please)
Step2
Brush oil on both sides of the slices.
Sprinkle some salt.

Step3
Place all the slices on the silicone baking sheet.
It’s ok if they touch a little, but try not to overlap them.
Stap4
Place a rack in the middle of the oven.
First, bake them for 20 minutes.
Step5
Then flip sides and bake them for for 15 minutes in the lower level.
The surface should still look yellowish and dry but no worries at this point.
At the event I placed the rack in the lower level because we baked something else
in the middle of the oven simultaneously.


Step6
When the surface looks like this color they are done!
They should be fluffy on the outside and so creamy inside.

Step 7
Serve it with pesto of your choice.
This sauce is my Chimichurri with 2 extra (chopped) sun dried tomatoes:)
