Vegan loaf with black beans

Are you looking for something vegan that will please everyone at the table this Holiday season that is fancy and not expensive ?
Try my rich and juicy vegan meatloaf.
Ingredients for 8 slices
(Veggies)
30g EV olive oil
100g carrot
100g celery
100g potatoes (not waxy kind)
100g chopped leek or onion
150g aubergine (important)
(Nuts ,beans and grains)
1/2 cup instant oats
1/2 cup almond flour (or finely chopped other nuts )
About 1cup strained black beans (from 400ml tinned beans )
(Spices)
6g salt
6g vegan broth (powder)
1tsp Ostmann's spice mix (partly salty)
1tsp thyme (dry)
1tsp cumin powder
1tsp sweet paprika powder
A pinch of black pepper
(Other ingredients)
2tbsp ground flax seeds
2tbsp applesauce (or water)
2tbsp brewer's yeast
Optional
Some more olive oil for the step5 & Step6
2 tbsp dry textured vegetable protein(to make it firm)
1tbsp mushroom sauce (to add color and flavor )

Topping
Finely chopped herbs
Holiday sauce (see below)
My holiday Sauce
Just mix all the sauce ingredients in a bowl
or let it simmer for a couple of minutes in case adding the optional ingredients.
30g water
30g tomato paste
30g vegan okonomiyaki sauce
30g red wine (optional)
5g vegan butter (optional)


Preheat the oven for 190℃.
Measure all the spices in a bowl.
You can choose the spices of your choice.
Rinse and strain a canned (400ml) boiled black beans.


Step1
Chop your vegetables finely.
Warm 30ml olive oil in a pot.
Add salt and sautee vegetables for 10 minutes.
(If you are adding some textured vegetable protein ,go ahead.
This is an optional ingredients but I sometimes add about 2tbsp of it.)
👉Don't skip aubergine because it makes the loaf juicy.

Step2
Strain canned black beans.
Just roughly mash them in a bowl.
(The beans should be easily mashed.)

Step3
Add beans into the cooked vegetables.
Mix everything with a spatula.
Add spices, almond flour and instant oats.


Step 4
Turn off the heat.
Add applesauce, brewer's yeast and ground flax seeds.
(Optionally add small amount of mushroom to add color)
Just combine everything with a spatula.

Step 5
Place a cooking sheet in the baking tray.
Brush some olive oil on the sheet.

Step 6
Fill the tray with the bean mixture.
Press it.
Lightly oil the surface.


Step7
Bake the loaf for 35 minutes at 190℃.

Step8
Smooth the top and top it with the sauce.
Bake it for another 5minutes.



Step 9
👉Let the vegan meatloaf rest for 30 minutes after baking, during which time it will firm up and be easier to slice.
When it's firm carefully slice them to serve.

Step 10
(Optional topping)
Sprinkle finely chopped parsley.
