Vegan meatloaf & WS 24.12.2024


That was so nice to share meals and cozy time with lovely members ⛄️


Ingredients for a medium size vegan meatloaf (4 servings)


200g diced tomatoes( canned )

50ml vegan broth (or water with 1tsp vegan broth powder )

1cup of fresh veggies of your choice( carrot and red bell pepper )

1cup vegetable texture protein made from soy flour(Alnatura)

1cup chopped green onions

1/4 cup waltnuts

1/2 cup rolled oats

1 vegan bread from store ( Brötchen) or 100g bread crumbs

1tbsp soy sauce (light )

1tsp cumin powder

1tsp garlic powder

1tbsp olive oil

1tbsp oregano

1tbsp brewer's yeast(optional)


Ingredients of the sauce

1/3 cup tomato puree

10ml olive oil

10ml dark soy sauce

A pinch of cinnamon powder

1tbsp rice syrup ( or any other sweetener )



1tsp olive oil for a baking dish

1 cooking sheet



Step1

Preheat the oven to 200°C.

First, crush the bread in a blender into crumbs.

Next, crush the walnuts, then the carrots and bell peppers.

All ingredients should be prepared just like this picture so you won't forget to add something:)


Step 2

Heat a small amount of oil in a frying pan and fry the spices, carrots, paprika and walnuts.




Step3

Add the tomatoes , then the VTP and cook until they get softened.

After approximately 2 minutes, add the rolled oats.



Step4

Add the rest of the ingredients.



Step5

Turn off the heat and stir.

If it gets too dried you can add a bit more tomato sauce.



Step6

Place a baking sheet on a baking tray and grease it with a little oil.



Step 7

Fill all the mixture in the baking dish and flatten the surface.




Step 8

Bake it in the oven for 20mins at 180℃.


Step 9

In the meantime, make a simple sauce in a pan.

You can add some red wine or balsamic vinegar, as well.

But for this cooking event, I used only these ingredients.

1/3 cup tomato puree

10ml olive oil

10ml dark soy sauce

A pinch of cinnamon powder

1tbsp rice syrup

Black pepper

Add all in a pan and bring it to a boil.





Step 10

Remove the vegan meatloaf from the oven and brush with the sauce from earlier.

Place back in the oven and bake for another 10 minutes.



Done :)


We made this vegan meat loaf with some other side dishes at the event.

Some of the topping ingredients are available at this store in Berlin.

We got some Farofa and batata palha to put in the potato salad.
