Ingredients for about 32 wonton dumplings
(8 wanton dumplings are enough for 1 main dish serving)
I usually make this filling and only use half of them to make 16 dumplings
The rest of the filling can be up cycled to other dishes such as fried rice.
Or you can make all 32 pieces (up to step 3 ) and freeze them.
Filling for about 32 wonton dumplings
225 (half block of 450g Asian soft tofu ) soft tofu
1/2 cup oatmeal (instant oats)
1/2 cup finely chopped carrot
1/2 cup finely chopped green onion
32 square wonton wrappers (don't use gyoza wrappers)
1tbsp soy sauce(light)
1tsp finely chopped ginger
A pinch of pepper
Broth for boiling wantan
(A medium size pot is big enough for 16 wonton dumplings, you can use the same water for the 2nd batch)
1L water
1tsp mushroom sauce
1tsp salt
For chili oil
1/2 tsp sesame seeds
1/2 tsp chili flakes
1/2 tsp finely chopped garlic
1/2 tsp vegan broth (powder )
A pinch of sugar
20 g roasted sesame oil ( heated in a pot)
Seasonings to add in serving bowls
Drizzle of light soy sauce per 8 pieces
1tsp chili oil for each bowl per 8 pieces
1/3 cup to 1/2 cup of wanton's boiling water for each bowl
Nori sheet (Optional)
Green onion (Optional)
Roasted sesame oil (Optional)
Step 1 How to make chili oil
Heat up 20g roasted sesame oil in a pot ( this pot can be reused in the next step )

Prepare all the chili oil seasoning in a bowl.
Pour in the heated sesame oil .(or any oil of your choice)
Let it sizzle for a while.

Step 2
Add all the ingredients for filling in a big bowl.
Mash tofu with a wooden spoon.
(You don't have to cook any ingredients here)

Step 3
Scoop about 1tbsp filling for a wrapper.
And place the filling in the center of a square wrapper.
First seal the wrapper into a rectangle and then make it round.

Step 4
Boil 1000g water in a pot.
Add 1tsp salt and 1tsp mushroom sauce ( or make any vegan broth of your choice)

Step 4
Boil wonton dumplings in this broth for 4 minutes ( max 16 pieces at a time)
Carefully scoop boiled dumplings with strainer ladle.
Save the boiling water(broth) for the next step.

Step 5
How to serve wonton
Serve wonton dumplings in a bowl with a drizzle (3g) of soy sauce and
1tsp of chili oil and about 1/3-1/2 cup of broth from the previous step.
Sprinkle some sesame seeds and green onion for garnish.

How to store boiled dumplings (TO GO)
Place boiled wonton dumplings in a container.
Drizzle some soy sauce and chili oil over the dumplings.
Keep broth in a separate container such as a thermos bottle.
Serve dumplings with warm broth when you eat them :)

If you want to fry wonton , you can fry them after the step 3 without boiling.
I use about 20g peanut oil to fry 12 pieces.
You can use any heat stable oil for frying but I usually use peanut oil.
Just fry wonton for about 2 minutes each side until golden.

Serve fried wonton with some condiments of your choice.
