Orange Sweet Chili Stir-fry

This recipe perfectly complements any plant based proteins and veggies.
It's an ideal meal also for busy professionals.
Ingredients for 1 main dish serving
200g vegetables of your choice
(Bell pepper,Bok choy,celery ,zucchini ,green onion etc)
50g Aromatic vegetables
(Onion, white part from green onion)
50g firm tofu (Edeka's)
1tbsp cornstarch
1/2 tsp turmeric powder
1tbsp oil
(Stir-fry sauce)
Just mix everything in a bowl.
👉You can reduce the amount of sweet chili sauce if it's too spicy or saucy.
1/4 cup sweet chili sauce (homemade /store bought)
1/4 cup orange juice (fresh/store bought)=60ml
1tbsp light soy sauce
Preparation
How to cut veggies and tofu
(I used my hand to break tofu into cubes)

Step1
Sprinkle cornstarch and turmeric powder over tofu.
Heat some oil in a frying pan.
Stir fry only tofu cubes over a medium high heat until golden.
It takes about 4-5minutes.



Step 2
While tofu is getting crispy, mix stir-fry sauce in a bowl.
You can use the same bowl from step 1.
So the rest of cornstarch and turmeric powder will not be wasted.
(Stir-fry sauce)
1/4 cup sweet chili sauce (homemade /store bought)
1/4 cup orange juice (fresh/store bought)
1tbsp light soy sauce

Step3
Add aromatic vegetables such as onions and white part of green onions.
Stir fry them until onion slices become translucent.


Step 4
Add all the fresh vegetables of your choice except for green leaves.
Here I'm adding bell peppers ,celery and the white part of Bok choi
Stir fry them for 1-2 minutes over a high heat.

Step 5
Add green leaves and pour in the stir fry sauce.


Step 6
Once green leaves are tender the stir fry is ready.
Serve it with udon noodles ,steamed Jasmine rice ,couscous or any other cooked whole grains:)

By the way...
I made this orange chili sauce originally to serve with my fried cauliflowers :)
